Waffles for Breakfast!

Great recipe for your waffle maker for breakfast or a light lunch

1 egg - needs to be separated
1  cup milk
1 cup plain flour
1/4 teaspoon baking powder
1 tablespoon sugar
1 ounce melted butter
1 tablespoon cold water

Beat the egg whites until you get firm peaks. Beat the egg yolks and milk lightly together. Add the sifted dry ingredients and beat until smooth. Add the melted, cooled butter and the water. Blend well. Fold in the firmly beaten egg whites.

Heat the waffle maker. Brush both top and bottom surfaces of the waffle maker with a teaspoon of oil. Spoon approximately 2 tablespoons of the waffle mixture into the centre. Close the waffle maker, cook until golden brown for about 1 minute.

When the waffle is ready, all of the steam will have stopped. If you try to lift the top of the waffle maker and the top shows resistance, it is not quite ready. Cook a minute or two longer and try again.

Makes about 5 waffles. Delicious!
